    Chill glass

    Place a chilled coupe or Nick & Nora glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to ensure the drink stays cold.

    Combine ingredients

    In a mixing glass, add the Old Tom gin (2 oz), sweet vermouth (1 oz), maraschino liqueur (0.25 oz), and 2 dashes of orange bitters.

    Add ice and stir

    Fill the mixing glass with plenty of fresh ice (enough to reach just above the liquid). Stir gently with a bar spoon for about 30–40 seconds (15–20 full turns) until the mixture is well-chilled and slightly diluted — the spoon should frost and the outside of the mixing glass should become cold.

    Strain

    Discard the ice or water from the chilled serving glass. Using a julep or Hawthorne strainer, double-strain the cocktail into the chilled coupe/Nick & Nora to remove any tiny shards of ice.

    Garnish and serve

    Express the oils of a lemon twist over the surface of the cocktail by holding the twist over the glass and giving it a quick squeeze, then rub the rim with the peel and drop it into the drink. Serve immediately.
