Prep vegetables and noodles
If using fresh chow mein/egg noodles, separate strands gently. If tightly packed, run under warm water to loosen and drain well. Julienne the carrot, slice mushrooms, mince garlic, and thinly slice green onions, keeping whites and greens separated.

Cook noodles (if needed)
If the fresh noodles require brief blanching: bring a large pot of salted water to a boil, add noodles and cook 30–60 seconds until just pliable. Drain well and toss immediately with 1 tablespoon neutral oil to prevent sticking. If your fresh noodles are ready-to-use, skip blanching and ensure they are separated.

Quick stir-fry the vegetables
Heat a large wide skillet or wok over medium-high heat until hot. Add 1 tablespoon neutral oil and 1 tablespoon butter. Add the white parts of the green onion, sliced mushrooms, and carrots. Stir-fry 1–2 minutes until fragrant and slightly softened. Add bean sprouts and stir 30 seconds just to warm through. Transfer vegetables to a bowl and keep hot.

Make the garlic-butter base
In the same skillet or wok over medium heat, add 2 tablespoons butter and allow it to melt and begin to foam. Add the minced garlic and crushed red pepper flakes. Cook, stirring constantly, 45–60 seconds until garlic is fragrant and just beginning to turn golden (do not burn).

Build the sauce
Reduce heat to medium-low. Add the soy sauce, oyster sauce, fish sauce, brown sugar, rice wine vinegar, black pepper, and sesame oil to the garlic-butter. Stir to combine and warm through 20–30 seconds. Taste and adjust: add up to 1 tablespoon soy sauce for saltiness or 1/2 teaspoon sugar for balance if needed.

Combine noodles with sauce
Turn heat up to medium-high. Add the drained noodles to the skillet, using tongs to toss and coat them thoroughly in the garlic-butter sauce. Add the remaining 1 tablespoon butter while tossing to create a glossy finish. Work quickly so the noodles pick up the sauce evenly, 1–2 minutes.

Add vegetables and cheese
Return the cooked vegetables to the skillet and toss them with the noodles until evenly distributed and heated through, about 30–45 seconds. Sprinkle the grated Parmesan over the noodles and toss thoroughly until the cheese melts into the hot noodles and sauce, creating a lightly creamy coating. If the mixture seems dry, add 1–2 tablespoons warm water and toss to loosen.

Divide the garlic noodle mixture among 3–4 bowls. Sprinkle with toasted sesame seeds, remaining green onion slices, and extra grated Parmesan if desired. Serve immediately with a lemon or lime wedge on the side for a bright finish.
