Crab Rangoon Filling

    Prepare filling

    Pick over Dungeness crab meat carefully to remove any shells. In a medium bowl, break up the softened cream cheese with a fork until smooth. Add the crab meat, sliced green onions, minced garlic, soy sauce, sesame oil, Worcestershire sauce, black pepper, and sugar. Gently fold until ingredients are evenly combined but crab pieces remain slightly chunky. Taste and adjust seasoning (a small pinch more salt or soy if desired). Chill the mixture for 15–20 minutes to firm up slightly — this makes filling and sealing easier.

Wontons & Frying

    Prepare wrappers

    Place wonton wrappers on a clean work surface covered with a slightly damp towel to prevent drying. In a small bowl whisk the beaten egg with the teaspoon of flour (this creates a slightly tacky seal).

    Assemble Rangoon

    Spoon about 1 heaping teaspoon (approximately 10–12 g) of the chilled crab-cream cheese filling into the center of each wonton wrapper. Brush the wrapper edges with a thin layer of the egg wash. Fold the wrapper over diagonally to form a triangle, press out excess air and seal edges tightly. For a classic folded shape, bring the two outer corners together and overlap slightly, sealing with egg wash to make a small purse/pinch. Place assembled rangoons on a baking sheet lined with parchment; cover with a damp towel while working to keep wrappers from drying.

    Heat oil

    Pour vegetable oil into a deep, heavy-bottomed skillet or pot to a depth of about 2 inches (roughly 3–4 cups depending on pan). Heat over medium-high to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of wrapper — it should sizzle and turn golden in about 30–40 seconds.

    Fry until crisp

    Working in batches (do not overcrowd), gently drop 4–6 rangoons into the hot oil seam-side down. Fry, turning as needed, until evenly golden brown and crisp, about 2–3 minutes per batch. Use a slotted spoon to transfer rangoons to a wire rack set over a baking sheet or to paper towels to drain. Let rest 1–2 minutes before serving; they will crisp further as they cool.

    Alternative: bake

    For a lighter version, preheat oven to 400°F (200°C). Brush or spray both sides of assembled rangoons lightly with neutral oil, arrange on a parchment-lined baking sheet, and bake 10–12 minutes until golden, flipping once halfway through. Baking yields a different texture (less blistered) but still tasty.

Sweet Chili Vinegar Dipping Sauce

    Make sauce

    In a small saucepan combine rice vinegar, sweet chili sauce, sugar, and water. Warm over low heat, stirring to dissolve sugar and to blend the sauces, about 2–3 minutes — do not boil. Taste and add red chili flakes if you want more heat, and a pinch of salt if needed. Remove from heat and let cool to room temperature; sauce will thicken slightly as it cools. Transfer to a small serving bowl.

Garnish & Serve

    Arrange warm Dungeness Crab Rangoons on a platter. Sprinkle toasted sesame seeds and sliced green onion over the rangoons. Serve immediately with the sweet chili vinegar dipping sauce on the side and lime wedges for optional brightening. Leftovers can be refrigerated in an airtight container for up to 24 hours; reheat in a 350°F (175°C) oven for 6–8 minutes to re-crisp.
