Cheeses

Method

Cheeses

  1. 1

    Bring cheeses to temperature

Remove all cheeses from refrigeration 30–45 minutes before serving and keep them covered. This allows flavors and textures to open up.

  2. 2

Place the Cypress Grove Truffle Tremor, Don Juan Manchego, and Triple Cream Brie on the chosen serving board or platter with some space between each cheese for cutting and accompaniments.

  3. 3

For presentation, leave the Manchego whole and cut 6–8 thin wedges or slices right before serving. Leave the Brie whole; optionally score a shallow X on top to invite spreading. Keep the Truffle Tremor intact so guests can spread or slice as desired.

Crostini & Crackers

  1. 4

    Make crostini

Preheat oven to 375°F (190°C). Brush both sides of the baguette slices lightly with olive oil and arrange in a single layer on a baking sheet. Bake 8–10 minutes, flipping once, until crisp and lightly golden. Cool on a rack.

  2. 5

Arrange baked crostini and assorted crackers in a small stack or fan on the board near the cheeses.

Fresh Fruit & Produce

  1. 6

Rinse grapes and leave small clusters or halve larger grapes. Rinse and thinly slice the apple crosswise; fan a few slices near the Manchego and truffle cheese. To prevent browning, squeeze a few drops of lemon juice on apple slices if desired (optional).

Accoutrements & Condiments

  1. 7

Spoon fig jam into a small ramekin and place on the board. Spoon honey into a tiny dish or drizzle a thin line near the triple cream brie for guests who like a sweet contrast.

  2. 8

Place cornichons in a small pile, and scatter Marcona almonds in a small bowl or directly on the board. These provide savory, briny, and crunchy textures that complement the cheeses.

Garnish & Finish

  1. 9

Tuck thyme sprigs between cheeses and accoutrements for aroma and visual appeal. Lightly crack black pepper over the Brie and Truffle Tremor (avoid over-seasoning the Manchego) so guests can taste the peppered finish.

  2. 10

Provide separate cheese knives or spreaders for each cheese (a soft cheese spreader for Brie and Truffle Tremor, a hard-cheese knife for Manchego). Ensure the board has small spoons for jams and honey. Serve immediately so cheeses remain at room temperature and textures are ideal.
