Prepare dates
Using a small paring knife, slice each medjool date lengthwise on one side and gently open to create a pocket. Remove and discard any pit remnants so the cavity is clean.

Make filling
In a small bowl, combine the goat cheese, finely chopped rosemary, and freshly ground black pepper. Mix until smooth and homogenous. Taste and adjust pepper or rosemary as desired.

Place one whole roasted almond inside each pitted date first (this gives a pleasant crunch and helps hold the cheese). Then pipe or spoon approximately 1/2 tablespoon of the goat cheese mixture into the cavity of each date, pressing gently so the almond remains centered.

Prepare bacon
Preheat the oven to 400°F (200°C). Cut each slice of bacon in half crosswise so you have 24 shorter strips. Lightly oil a rimmed baking sheet or line it with foil and place a wire rack on top if available (rack helps bacon crisp).

Wrap each stuffed date with one half-slice of bacon, placing the seam on the bottom. Secure bacon with a toothpick inserted through the date to hold it in place. Repeat until all 24 dates are wrapped.

Bake
Arrange the bacon-wrapped dates on the prepared rack or directly on the baking sheet seam-side down, spaced about 1/2 inch apart. Bake in the preheated oven for 18–22 minutes, rotating the pan once halfway through, until the bacon is crisp and browned. If using a rack, bacon will crisp more evenly; if directly on foil, drain excess fat as needed.

Finish and serve
Remove from oven and let cool on the rack for 3–5 minutes so the cheese firms slightly. Transfer to a serving platter, removing toothpicks or leaving them in for easy pick-up (indicate to guests if toothpicks remain). Optionally sprinkle a few extra chopped rosemary leaves over the top for garnish. Serve warm or at room temperature.
