    Combine ingredients

    In a cocktail shaker add 2 oz gin, 0.5 oz fresh lemon juice, 0.5 oz fresh lime juice, 0.75 oz simple syrup, 1 large egg white, 1 oz heavy cream and 2 drops orange flower water.

    Dry shake

    Seal the shaker and shake vigorously without ice for 20–30 seconds. The goal is to emulsify the egg white and cream to build a dense foam.

    Wet shake

    Open the shaker, add a generous handful of ice (about 1 cup). Seal and shake very hard for 20–30 seconds until the shaker feels very cold. This chills and further aerates the mixture while diluting slightly.

Finishing & Serve

    Strain and top

    Double strain the shaken mixture (using a Hawthorne and a fine mesh strainer if available) into a chilled Collins or highball glass without ice. Carefully top with about 2 oz very cold club soda poured gently over the back of a spoon to preserve foam.

    Adjust and garnish

    If desired, add an extra 1–2 drops orange flower water on top of the foam for aroma. Garnish with a thin lemon or orange wheel on the rim. Serve immediately; the signature tall, creamy foam should sit above the liquid.

    Notes on technique

    For an even thicker foam, perform a longer dry shake (up to 45 seconds) before adding ice. Use very fresh egg whites and very cold soda. If concerned about raw egg, use pasteurized egg white or a 30 ml (1 oz) pasteurized liquid egg white substitute in place of the fresh egg white.
