Method

Cocktail

  1. 1

    Chill glass

Place a coupe or martini glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to chill it.

  2. 2

    Measure and combine

In a mixing glass or large jug, add 2 oz rye whiskey, 1/2 oz dry vermouth, 1/2 oz maraschino liqueur, and 1/4 oz amaro (or Amer Picon substitute). Add 1 dash of Angostura bitters.

  3. 3

    Stir

Fill the mixing glass with enough ice to reach the top (about 1 cup). Stir gently but thoroughly with a bar spoon for 20–30 seconds, or until the mixture is well chilled (around 20°F/ -7°C on the spoon) and slightly diluted (roughly 20–25% dilution from the spirits).

  4. 4

    Strain

Discard ice water from the chilled serving glass if used. Using a Hawthorne or julep strainer, double-strain the cocktail from the mixing glass into the chilled coupe or martini glass to remove any small ice chips.

  5. 5

    Garnish and serve

Express a lemon twist over the cocktail to release oils and run it around the rim, then drop it in (or alternatively, add a brandied cherry on a pick). Serve immediately.
