In a large heatproof mixing bowl or pitcher, combine 2.5 cups bourbon, 2 cups whole milk, 1 cup heavy cream, and 2 teaspoons vanilla extract. Stir gently to combine. Chill in the refrigerator while you prepare the syrup and citrus juices (at least 30 minutes) so the punch will be cold before straining.

In a small saucepan, combine 1 cup granulated sugar, 1/2 cup water, and 2 cinnamon sticks. Warm over medium heat, stirring until the sugar dissolves. Bring just to a simmer, then remove from heat and let steep for 15 minutes to infuse. Remove cinnamon sticks and let syrup cool to room temperature.

Juice fresh lemons and oranges to yield 3/4 cup lemon juice and 1/4 cup orange juice. Strain the juices through a fine-mesh sieve to remove pulp and seeds. Chill the juices briefly if they have warmed.

Clarification (milk curdling)
Remove the chilled bourbon-dairy mixture from the refrigerator. Pour the strained citrus juices (0.75 cup lemon + 0.25 cup orange) into the bowl with the milk and bourbon mixture in a steady stream while stirring gently. The acid will curdle the milk, separating curds from whey — this is intentional and necessary to clarify the punch. Stir for 10–20 seconds to ensure thorough curdling.

Once curdled, let the mixture rest at room temperature for 30–45 minutes. During this time, the curds will coalesce and begin to sink, making straining easier.

Prepare filters
Set up a fine-mesh sieve lined with several layers of cheesecloth or a coffee filter over a large bowl or pitcher. You can also use a jelly bag or nut-milk bag for a clearer result. Place the strainer in a position where you can pour slowly.

Carefully ladle or pour the curdled mixture through the lined sieve. Allow the liquid to pass through by gravity; do not press the curds hard — pressing will push solids and cloud the punch. Let it drip through; this may take 20–40 minutes.

Second strain
Once most liquid has passed, transfer the liquid to a second coffee filter or a new layer of cheesecloth and strain again to further clarify. If you used a jelly bag, you may want to hang it to drip for an hour for maximum clarity.

Sweeten and spice
When the clarified punch is collected, stir in the cooled spiced simple syrup to taste. Start with 1/2 cup of the syrup, taste, and add up to the full 1 cup if you prefer sweeter punch. If you didn't add grated nutmeg to the syrup earlier, freshly grate a small pinch into the punch (about 1/8 tsp) and stir to incorporate.
