Preparing the Bone Marrow
Roasting the Bones
Preheat your oven to 450°F (232°C). Place the beef marrow bones upright in a roasting pan, ensuring they are stable.
Sprinkle the sea salt and black pepper evenly over the top of the bones.
Add fresh thyme on top of the bones for added flavor.
Roast the bones in the preheated oven for 15-20 minutes, or until the marrow is bubbling and has started to slightly brown.

In a small bowl, combine the demerara sugar and softened butter, mixing until it forms a paste.
