    Chop the Vegetables

    Dice the onion, carrot, and celery into small pieces. Mince the garlic cloves. Set aside.

    Prepare the Tomatoes

    If using fresh tomatoes, blanch them in boiling water for 1-2 minutes, then peel and chop them. If using canned tomatoes, simply chop them.

Cooking

    Sauté the Vegetables

    In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion, carrot, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.

    Add the chopped tomatoes to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, you can blend it in batches using a countertop blender.

    Add Cream and Seasoning

    Stir in the heavy cream, salt, black pepper, dried basil, and sugar. Cook for an additional 5 minutes to heat through.

Serving

    Ladle the tomato bisque into bowls, and garnish with fresh basil leaves and croutons. Serve hot.
