Vegetable Soup

    Prepare the Vegetables

    Heat the olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes or until the vegetables are softened.

    Add Garlic and Broth

    Stir in the minced garlic and cook for an additional minute. Pour in the vegetable broth and bring to a boil.

    Add Remaining Ingredients

    Add the diced tomatoes, green beans, salt, pepper, thyme, and bay leaf. Reduce the heat, cover, and let simmer for 20 minutes.

    Finish with Spinach

    Remove the bay leaf and stir in the fresh spinach. Cook for an additional 5 minutes until the spinach is wilted. Adjust seasoning to taste and serve hot.

Chicken Noodle Soup

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced carrots, and sliced celery. Cook for about 5-7 minutes until the vegetables are tender.

    Add Garlic and Broth

    Stir in the minced garlic and sauté for another minute. Pour in the chicken broth and bring it to a boil.

    Add Chicken and Noodles

    Add the shredded chicken and egg noodles to the pot. Season with salt, pepper, and thyme. Cook until the noodles are tender, about 10 minutes.

    Garnish and Serve

    Stir in the chopped parsley and adjust seasoning as needed. Serve hot and enjoy your comforting chicken noodle soup.
