Brisket

Wood for Smoking

BBQ Sauce (optional)

Method

Preparation of Brisket

  1. 1

    Prepare the Rub

In a small bowl, combine salt, black pepper, paprika, garlic powder, onion powder, and brown sugar to create a dry rub.

  2. 2

    Apply Mustard

Spread mustard evenly over the entire surface of the brisket. This helps the rub adhere.

  3. 3

    Season the Brisket

Generously sprinkle the dry rub over the brisket, ensuring to cover all sides evenly.

Smoking Process

  1. 4

    Prepare the Smoker

Soak hickory wood chips in water for at least 30 minutes before using. This helps create smoke and prevents the chips from burning too quickly.

  2. 5

    Heat the Smoker

Preheat your smoker to 225°F (107°C). Once at temperature, add the soaked hickory wood chips.

  3. 6

    Smoke the Brisket

Place the brisket in the smoker, fat side up. Smoke for approximately 1.5 hours per pound, or until the internal temperature reaches 195-205°F (90-96°C).

Serving

  1. 7

    Rest the Brisket

Once the brisket reaches the desired temperature, remove it from the smoker and let it rest for at least 30 minutes before slicing.

  2. 8

    Slice and Serve

Slice the brisket against the grain and serve with BBQ sauce on the side, if desired.
