Avocado Mousse

Avocado Mousse

    Prepare the Avocado Mousse

    In a blender or food processor, combine ripe avocados, lime juice, garlic powder, and salt. Blend until smooth and creamy. Taste and adjust seasoning if necessary.

Creamy Chipotle Slaw

    Make the Creamy Chipotle Slaw

    In a large mixing bowl, combine shredded green cabbage, grated carrots, mayonnaise, minced chipotle in adobo, lime juice, and salt. Toss until the cabbage and carrots are well coated with the dressing. Set aside to allow flavors to meld.

Pico de Gallo

    Prepare the Pico de Gallo

    In a medium bowl, combine diced tomatoes, finely chopped red onion, chopped cilantro, lime juice, and salt. Mix well and let it sit for at least 10 minutes for the flavors to develop.

Shrimp

    Cook the Shrimp

    In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the shrimp, cumin, paprika, and salt. Cook for 3-5 minutes or until shrimp turn pink and opaque. Remove from heat and set aside.

    Warm the Tortillas

    In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble the Tacos

    On each tortilla, spread a spoonful of avocado mousse, add the cooked shrimp, top with creamy chipotle slaw, and finish with pico de gallo. Serve immediately.
