Prepare the Dough
In a large bowl, combine ricotta cheese, flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, gradually add more flour until manageable.

Shape the Gnocchi
On a floured surface, divide the dough into quarters and roll each into a long rope about 1/2 inch thick. Cut into 1-inch pieces. Press each piece with a fork to create grooves.

Roast the Tomatoes
Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until blistered.

Combine and Serve
Cook gnocchi in a pot of boiling salted water until they float to the top, about 2-3 minutes. Drain and toss with the beef short rib ragout. Serve with wilted Swiss chard and roasted tomatoes on top.
