    Dice the onion, carrots, celery, potato, zucchini, and tomato. Mince the garlic and set aside.

    Wash Spinach

    Rinse the fresh spinach thoroughly under cold water and allow to drain.

Cooking

    Sauté Base Ingredients

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic, diced carrots, celery, and potato. Cook for another 5-7 minutes until the vegetables start to soften.
