    Prepare the Sausage Mixture

    In a large mixing bowl, combine the ground pork, salt, black pepper, garlic powder, onion powder, paprika, red pepper flakes, and chopped parsley. Mix well using your hands or a spatula until all ingredients are evenly distributed.

    Prepare Sausage Casings (if using)

    If you are using sausage casings, rinse them thoroughly under cold water, then soak them in warm water for about 30 minutes to soften.

Cooking

    Shape the Sausages

    If not using casings, shape the sausage mixture into small links or patties, about 2-3 inches long. If using casings, fit the casing onto a sausage stuffer, and carefully fill with the sausage mixture, twisting into links as you go.

    Cook the Sausages

    Heat a skillet over medium heat and add a little oil if desired. Place the sausage links in the skillet and cook for approximately 10-12 minutes, turning occasionally, until they are browned on all sides and reach an internal temperature of 160°F (70°C).

    Remove the sausages from the skillet and let them rest for a few minutes before serving. Enjoy your homemade sausage links with your favorite sides.
