For the Roasted Turkey

    Preparation

    Preheat your oven to 325°F (165°C).

    Seasoning the Turkey

    Rub the entire turkey with olive oil, then season with salt, black pepper, minced garlic, and fresh rosemary. Make sure to get under the skin for maximum flavor.

    Stuffing the Turkey

    Stuff the cavity of the turkey with quartered onion, chopped carrots, and chopped celery.

    Roasting

    Place the turkey on a roasting rack in a large roasting pan. Roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C). Baste the turkey every 30 minutes with the juices from the pan.

    Resting

    Once fully cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.

For the Pepper Crusted Filet Mignon

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Generously season both sides of each steak with coarse black pepper and salt.

    In a large skillet, melt the butter over medium-high heat. Once melted, add the garlic cloves and thyme. Place the filet mignon in the skillet and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.
