Roasting the Cauliflower

    Prepare the Cauliflower

    Preheat your oven to 425°F (220°C). Remove the leaves and stem from the cauliflower head and cut it into florets.

    In a large bowl, combine the cauliflower florets with olive oil, salt, black pepper, and garlic powder. Toss until the florets are evenly coated.

    Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25–30 minutes, or until the florets are golden brown and tender, stirring halfway through cooking.

Making the Caper-Raisin Relish

    While the cauliflower is roasting, finely chop the red onion and fresh parsley. In a small bowl, combine the capers, raisins, chopped onion, and parsley.
