Method

Rack of Lamb

    Prepare the Lamb

    Preheat the oven to 400°F (200°C).

    In a small bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper together to form a marinade.

    Rub the marinade all over the rack of lamb, ensuring even coating.

    Place the lamb in a roasting pan and roast in the preheated oven for about 20-25 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).

    Remove from the oven and let it rest for 10 minutes before slicing.

Endive-Shallot Puree

    Cook the Endives and Shallots

    In a medium saucepan, melt the butter over medium heat.

    Add chopped shallots and cook until softened, about 3-4 minutes.

    Add the chopped endives, salt, and pepper, and continue to cook until the endives are wilted.

    Pour in the vegetable stock and bring to a simmer. Cook for about 10 minutes until the endives are tender.

    Transfer the mixture to a blender and puree until smooth. Adjust seasoning if necessary.

Roasted Cauliflower

    Prepare the Cauliflower

    Cut the cauliflower into florets and place them in a large bowl.

    Drizzle with olive oil, garlic powder, salt, and black pepper. Toss to coat evenly.

    Spread the florets on a baking sheet in a single layer.

    Roast in the oven alongside the lamb for 25-30 minutes, or until golden and tender, turning halfway through.

Pomegranate and Mint Oil

    Prepare the Dressing

    In a small bowl, combine the pomegranate juice, finely chopped mint leaves, olive oil, and a pinch of salt.
