Method

Wings

  1. 1

    Prepare the Duck Wings

Preheat your oven to 300°F (150°C). Season the duck wings with salt, black pepper, and five spice powder.

  2. 2

    Confit the Wings

Place the wings in a baking dish and cover with duck fat. Cook in the oven for about 2 hours until tender.

  3. 3

    Crisp the Wings

Increase oven temperature to 400°F (200°C) and cook for an additional 20-30 minutes until the skin is crispy.

Scallion Pancake

  1. 4

    Make Dough

In a bowl, mix flour and boiling water until a dough forms. Knead until smooth and let it rest for 30 minutes.

  2. 5

    Prepare Pancakes

Divide dough into 4 pieces. Roll out each piece, spread with oil, sprinkle with salt, and add scallions. Roll up tightly and flatten.

  3. 6

    Cook Pancakes

In a skillet, heat vegetable oil over medium heat. Cook each pancake until golden brown, about 3-4 minutes per side.

Pulled Duck BBQ

  1. 7

    Prepare Pulled Duck

Shred the cooked duck meat and mix it with Asian BBQ sauce in a saucepan. Heat over low until warmed through.

Roasted Garlic Mashed Potatoes

  1. 8

    Boil Potatoes

In a large pot, boil the peeled and cut potatoes until fork-tender, about 15-20 minutes.

  2. 9

    Mash Potatoes

Drain potatoes and return to pot. Add roasted garlic, butter, milk, salt, and pepper. Mash until creamy.

Creamed Spinach

  1. 10

    Sauté Spinach

In a skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute, then add spinach until wilted.

  2. 11

    Make Creamed Spinach

Stir in cream, salt, and pepper. Cook until thickened, about 5 minutes.

Red Wine Reduction

  1. 12

    Simmer Reduction

In a saucepan, combine red wine and shallots. Simmer over medium heat until reduced by half.

  2. 13

    Finish Sauce

Whisk in butter and salt until smooth. Serve warm.
