Sauce Preparation

    Make the Red Sauce

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasoning

    Stir in the canned tomatoes, salt, black pepper, and dried oregano. Reduce heat and let simmer for 15-20 minutes, stirring occasionally. Once thickened, set aside.

Roasted Tomatoes Preparation

    Roast the Tomatoes

    Preheat the oven to 200°C (400°F). Toss the cherry tomatoes with 1 tablespoon of olive oil and 0.5 teaspoons of salt. Spread them on a baking sheet and roast for 15-20 minutes until they burst and are slightly caramelized.

Pizza Assembly and Baking

    Prepare the Pizza Dough

    On a lightly floured surface, stretch the pizza dough into a round shape, about 12 inches in diameter. Transfer it to a pizza stone or baking sheet.

    Assemble the Pizza

    Spread the red sauce evenly over the pizza dough. Tear the fresh mozzarella into pieces and distribute them over the sauce. Add the roasted tomatoes on top.

    Bake the Pizza

    Preheat the oven to 250°C (482°F) and bake the pizza for about 10-12 minutes, or until the crust is golden and the cheese is bubbling.

    Finish with Basil Oil

    Remove the pizza from the oven, drizzle with basil oil, and top with fresh basil leaves before slicing and serving.
