Maple & Marshmallow Topping

Method

Preparation of Sweet Potatoes

  1. 1

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Wash and Cut Sweet Potatoes

Thoroughly wash the baby sweet potatoes. Cut them in half lengthwise.

  3. 3

    Season Potatoes

In a large bowl, toss the halved sweet potatoes with olive oil, sea salt, and black pepper until evenly coated.

  4. 4

    Arrange on Baking Sheet

Place the seasoned sweet potatoes cut-side down on a baking sheet lined with parchment paper.

  5. 5

    Roast Sweet Potatoes

Roast in the preheated oven for about 25-30 minutes, or until tender and lightly caramelized.

Preparing Maple & Marshmallow Topping

  1. 6

    Mix Maple Syrup and Cinnamon

In a small saucepan over medium heat, combine the maple syrup and cinnamon. Stir until warm.

  2. 7

    Add Marshmallows

Once the syrup mixture is warm, remove it from heat and add the mini marshmallows, stirring until they are slightly melted and coated with the syrup.

  3. 8

    Add Butter

Stir in the butter until melted and fully incorporated into the marshmallow mixture.

Assembly

  1. 9

    Combine Sweet Potatoes and Topping

Remove the sweet potatoes from the oven and carefully turn them cut-side up. Spoon the warm maple and marshmallow mixture generously over each sweet potato.

  2. 10

    Serve

Serve immediately while warm, allowing the topping to melt into the sweet potatoes.
