Preparation of Base

    Make the Base Mixture

    In a medium saucepan, combine whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring occasionally until the sugar has fully dissolved.

    Add Flavorings

    Remove the saucepan from heat and stir in vanilla extract and salt. Allow the mixture to cool to room temperature.

    Prepare Flavorings

    If using fresh fruit, puree the fruit in a blender until smooth. For chocolate, melt it if using solid chocolate or simply add cocoa powder to the cooled mixture. For nuts, finely chop before adding.

    Combine with Base

    Mix the prepared flavorings into the cooled base mixture until well combined.

Chilling and Churning

    Chill the Mixture

    Cover the mixture and refrigerate for at least 4 hours, or overnight, to allow flavors to meld and mixture to chill.

    Churn the Mixture

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze to Firm

    Transfer the gelato or sorbet to an airtight container and freeze for an additional 2-4 hours until firm.
