Preparation

    Prepare the Onions

    Slice the onions thinly. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized, approximately 20-25 minutes.

    Prepare the Filet Mignon

    While the onions are caramelizing, season the filet mignon steaks with salt and black pepper on both sides. Heat the remaining tablespoon of olive oil in a separate skillet over medium-high heat.

    Cook the Steaks

    Sear the filet mignon steaks in the hot skillet for about 4-5 minutes per side for medium-rare, or until they reach your desired doneness. Remove from the skillet and let rest for 5 minutes.

    Add Cheese

    During the last minute of cooking, place a slice of provolone cheese on each steak and cover the skillet to melt the cheese.

    Prepare the Peppers

    While the steak is resting, slice the hot peppers and set aside.

Assembly

    Assemble the Sandwich

    Slice the sub rolls or ciabatta bread in half. Place a filet mignon with melted cheese on the bottom half, followed by the caramelized onions and sliced hot peppers. Top with the other half of the bread.

    Cut the sandwich in half if desired and serve immediately while warm.
