Method

Crab Cakes Preparation

    Mix Ingredients

    In a large bowl, combine fresh crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, egg, breadcrumbs, Old Bay seasoning, salt, and black pepper. Mix gently until just combined.

    Shape Crab Cakes

    Form the mixture into patties, approximately 3 inches in diameter. Place them on a baking sheet lined with parchment paper.

    Chill

    Refrigerate the shaped crab cakes for at least 30 minutes to help set.

    Cook Crab Cakes

    Heat olive oil in a skillet over medium heat. Cook the crab cakes for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and keep warm.

Old Bay Fingerlings Preparation

    Prepare Potatoes

    Preheat the oven to 400°F (200°C). Wash and slice fingerling potatoes in half lengthwise.

    Season and Roast

    In a bowl, toss the fingerling potatoes with olive oil, Old Bay seasoning, and salt. Spread them on a baking sheet and roast in the oven for 25-30 minutes or until golden and crispy.

Asparagus Preparation

    Wash asparagus and trim off the woody ends.

    In a bowl, toss asparagus with olive oil, salt, and black pepper. Spread on a baking sheet and roast in the oven for 15-20 minutes until tender.

Hollandaise Sauce Preparation

    In a small saucepan, melt butter over low heat. Set aside to cool slightly.

    In a bowl, whisk together egg yolks and lemon juice until pale and slightly thickened.

Colossal Crab Topping Preparation

    In a bowl, combine colossal crab meat, lemon juice, chopped parsley, and Old Bay seasoning. Mix gently to incorporate.
