Method

Marinating the Lamb

    Prepare Marinade

    In a bowl, mix together minced garlic, chopped rosemary, chopped thyme, olive oil, lemon juice, salt, and black pepper.

    Marinate Lamb

    Place the lamb shoulder in a large resealable bag or dish and pour the marinade over it. Make sure the lamb is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Roasting the Lamb

    Preheat Oven

    Preheat your oven to 160°C (320°F).

    Prepare Vegetables

    In a roasting pan, arrange the chopped carrots, diced potatoes, quartered onions, and chopped celery.

    Roast Lamb

    Remove the marinated lamb from the refrigerator and place it on top of the vegetables in the roasting pan. Cover with foil and roast for 2 hours.

    Uncover and Brown

    After 2 hours, remove the foil and increase the oven temperature to 200°C (392°F). Roast for an additional 30-40 minutes until the lamb is browned and cooked to your desired doneness.

Making the Gravy

    Deglaze the Pan

    Once the lamb is done roasting, remove it from the pan and let it rest. Pour the red wine into the pan, scraping up the browned bits.

    Prepare Gravy

    In a small bowl, mix cornstarch with water to create a slurry. Pour the beef stock into the pan along with the slurry. Stir well and bring to a simmer until thickened.

    Serve

    Slice the lamb and serve it with the roasted vegetables and gravy.
