Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, then set aside.

  2. 2

    Melt the Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until both are completely melted and combined.

  3. 3

    Mix the Batter

In a mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and slightly thickened. Stir in the melted chocolate mixture and mix until smooth. Add the vanilla extract and a pinch of salt, then gently fold in the all-purpose flour until just combined.

Baking

  1. 4

    Fill the Ramekins

Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

  2. 5

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is soft and gooey.

  3. 6

    Cool Slightly

Remove the ramekins from the oven and allow them to cool for 1-2 minutes before inverting onto plates.

Serving

  1. 7

    Serve

Carefully remove the lava cakes from the ramekins and place them on dessert plates. Top each cake with a scoop of vanilla ice cream and sprinkle with dark chocolate shavings. Serve immediately.
