Prepare Sweet Potatoes
Preheat your oven to 425°F (220°C). Peel the sweet potatoes and cut them into thin strips (about 1/4 inch thick) to resemble fries.

Season and Bake
In a large bowl, toss the sweet potato strips with olive oil, salt, black pepper, and paprika. Spread them out on a baking sheet in a single layer. Bake for 20-25 minutes, flipping halfway through, until they are crispy and golden brown.

Add Milk and Cheese
Gradually whisk in the milk, stirring constantly until the mixture thickens. Lower the heat and add the shredded cheddar cheese, stirring until melted and smooth. Season with salt and black pepper to taste.

Sear the Short Ribs
In a large pot or Dutch oven, heat a bit of oil over medium-high heat. Season the short ribs with salt and pepper, then sear them on all sides until browned. Remove and set aside.
