    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into small cubes, approximately 1 inch in size.

    Season the Potatoes

    In a large bowl, combine the cubed potatoes, olive oil, paprika, garlic powder, onion powder, salt, and black pepper. Toss until the potatoes are well coated.

    Cook the Potatoes

    Heat a large skillet over medium heat. Add the seasoned potatoes and cook for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy on the outside and tender on the inside.

    Once cooked, remove from heat and stir in the fresh parsley. Set aside.

    In a mixing bowl, crack the eggs and add the milk, salt, and black pepper. Whisk vigorously until the mixture is well combined and slightly frothy.
