Method

Preparation of Brisket

  1. 1

    Trim the Brisket

Remove excess fat from the brisket, leaving about 1/4 inch of fat for flavor.

  2. 2

    Apply Dry Rub

In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper. Rub the mixture generously all over the brisket. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking the Brisket

  1. 3

    Preheat the Smoker

Preheat your smoker to 225°F (107°C).

  2. 4

    Smoke the Brisket

Place the brisket in the smoker, fat side up. Smoke for approximately 1 hour per pound, or until the internal temperature reaches 195°F (90°C).

Making BBQ Sauce

  1. 5

    Combine Sauce Ingredients

In a saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, smoked paprika, garlic powder, and salt. Stir well to combine.

  2. 6

    Simmer the Sauce

Bring the sauce to a simmer and cook for about 15 minutes, stirring occasionally until slightly thickened.

Serving

  1. 7

    Rest the Brisket

Once the brisket reaches the desired temperature, remove it from the smoker and let it rest for at least 30 minutes.

  2. 8

    Slice and Serve

Slice the brisket against the grain, serve with BBQ sauce on the side.
