Method

Bagels

  1. 1

    Activate Yeast

In a small bowl, combine warm water (1.5 cups) and sugar (2 tbs). Sprinkle the yeast (2 tsp) over the water and let it sit for about 5-10 minutes until bubbly and frothy.

  2. 2

    Make Dough

In a large mixing bowl, combine the all-purpose flour (4 cups) and salt (1 tsp). Once the yeast mixture is activated, pour it into the flour mixture and stir until a dough forms.

  3. 3

    Knead Dough

Transfer the dough onto a floured surface and knead it for about 10 minutes until smooth and elastic. Place the kneaded dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

  4. 4

    Shape Bagels

Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole through the center with your finger to shape the bagels. Ensure the hole is about 1-2 inches wide.

  5. 5

    Boil Bagels

In a large pot, bring water to a boil and add baking soda (2 tbs). Boil each bagel for about 1 minute on each side, then remove and place on a baking sheet lined with parchment paper.

  6. 6

    Egg Wash

Beat the egg (1 whole) and brush it over the bagels for a shiny finish.

  7. 7

    Bake Bagels

Preheat the oven to 425°F (220°C). Bake the bagels for 20-25 minutes or until golden brown. Let them cool on a wire rack.
