Method

Truffles

  1. 1

    Melt the Chocolate

Chop the dark chocolate and place it in a heatproof bowl. Heat the heavy cream in a small saucepan until just simmering, then pour it over the chocolate. Let it sit for 5 minutes before stirring until smooth.

  2. 2

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for about 1-2 hours until the mixture is firm enough to scoop.

  3. 3

    Form the Truffles

Use a melon baller or small scoop to form balls from the chilled chocolate mixture, then roll them in cocoa powder to coat.

Flourless Chocolate Cake

  1. 4

    Preheat Oven

Preheat your oven to 175°C (350°F) and grease a 9-inch round cake pan.

  2. 5

    Melt Chocolate and Butter

Chop the dark chocolate and butter, then melt them together in a heatproof bowl over simmering water or in the microwave.

  3. 6

    Mix Ingredients

In a mixing bowl, combine the melted chocolate mixture with sugar, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. 7

    Bake

Pour the batter into the prepared cake pan and bake for 25-30 minutes until set. Let cool before serving.

Chocolate Chip Cookies

  1. 8

    Preheat Oven

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

  2. 9

    Cream Butter and Sugars

In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy.

  3. 10

    Add Egg and Vanilla

Add the egg and vanilla extract to the butter mixture, mixing until combined.

  4. 11

    Combine Dry Ingredients

In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, combining until just mixed.

  5. 12

    Add Chocolate Chips

Fold in the chocolate chips until evenly distributed.

  6. 13

    Bake Cookies

Drop spoonfuls of cookie dough onto the prepared baking sheet and bake for 10-12 minutes or until golden brown.

Cranberry-Lime Tart

  1. 14

    Prepare the Crust

Pre-bake the pie crust in a 9-inch tart pan according to package directions until lightly golden.

  2. 15

    Make the Filling

In a saucepan, combine fresh cranberries, sugar, lime juice, butter, and eggs. Cook over medium heat until the cranberries burst and the mixture thickens.

  3. 16

    Fill the Crust

Pour the cranberry-lime filling into the pre-baked crust and spread evenly.

  4. 17

    Bake Tart

Bake the tart in a preheated oven at 180°C (350°F) for 25-30 minutes until set. Allow to cool before serving.

Vanilla Bean Cheesecake

  1. 18

    Preheat Oven

Preheat your oven to 160°C (325°F) and prepare a 9-inch springform pan.

  2. 19

    Mix Cream Cheese and Sugar

In a large mixing bowl, beat cream cheese and sugar together until smooth and creamy.

  3. 20

    Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition, then stir in the vanilla bean paste and sour cream.

  4. 21

    Bake Cheesecake

Pour the cheesecake mixture into the prepared crust and bake for 50-60 minutes until set. Let cool completely before refrigerating.

Chocolate-Covered Caramels

  1. 22

    Make Caramel

In a saucepan, combine granulated sugar, heavy cream, and butter. Cook over medium heat, stirring until the mixture reaches a soft-ball stage (240°F / 115°C).

  2. 23

    Cool the Caramel

Pour the caramel mixture into a greased 8x8 inch pan and allow it to cool completely.

  3. 24

    Cut and Coat

Once cooled, cut the caramel into small squares. Melt the dark chocolate and dip each caramel square into the chocolate, allowing excess to drip off.

  4. 25

    Set the Chocolates

Place the chocolate-covered caramels on a parchment-lined tray and let them set until the chocolate hardens.
