Melt the Chocolate
Chop the dark chocolate and place it in a heatproof bowl. Heat the heavy cream in a small saucepan until just simmering, then pour it over the chocolate. Let it sit for 5 minutes before stirring until smooth.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for about 1-2 hours until the mixture is firm enough to scoop.

Form the Truffles
Use a melon baller or small scoop to form balls from the chilled chocolate mixture, then roll them in cocoa powder to coat.

Preheat your oven to 175°C (350°F) and grease a 9-inch round cake pan.

Melt Chocolate and Butter
Chop the dark chocolate and butter, then melt them together in a heatproof bowl over simmering water or in the microwave.

In a mixing bowl, combine the melted chocolate mixture with sugar, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Once cooled, cut the caramel into small squares. Melt the dark chocolate and dip each caramel square into the chocolate, allowing excess to drip off.
