Pastry Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut the cold unsalted butter into small cubes and add to the flour mixture, blending with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Water

    Gradually add cold water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling and Assembling

    Prepare the Filling

    In a medium bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. If using fruit, chop it into small pieces.

    Roll Out the Dough

    Preheat the oven to 375°F (190°C). On a floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut into desired shapes (squares, circles, etc.).

    Fill the Pastries

    Place a tablespoon of cream cheese filling or a mix of chocolate chips and fresh fruit in the center of each pastry shape. Fold the pastry over to create a pocket and seal the edges with a fork.

Baking and Serving
