Dough

Egg Wash

Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm milk (about 110°F) with active dry yeast and sugar. Let it sit for 5-10 minutes until frothy.

  2. 2

    Mix Ingredients

In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture, softened butter, and eggs. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1-1.5 hours.

Shaping and Filling

  1. 5

    Roll Out Dough

Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a large rectangle about 1/4 inch thick.

  2. 6

    Cut Shapes

Cut the dough into triangles for croissants or squares for pastries. Size can vary based on preference.

  3. 7

    Add Filling

For each triangle, place a small amount of your desired filling (chocolate chips, almond paste, fruit preserves, or cream cheese). Roll from the base to the tip.

  4. 8

    Shape the Pastries

For pastries, fold the corners of the square towards the center over the filling and pinch to seal.

Second Rise and Baking

  1. 9

    Prepare Egg Wash

In a small bowl, whisk together one egg and milk until well combined.

  2. 10

    Brush Pastries

Place the shaped pastries on a lined baking sheet. Brush the tops with the egg wash for a golden finish.

  3. 11

    Second Rise

Cover the pastries with a cloth and let them rise again for about 30 minutes.

  4. 12

    Bake

Preheat the oven to 375°F (190°C). Bake the pastries for 15-20 minutes or until they are golden brown.
