    Prepare the Dough

    In a large mixing bowl, combine the flour, granulated sugar, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough holds together without being sticky. Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Filling

    Prepare the Apples

    In a large bowl, toss the sliced apples with the granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well coated.

    Set Aside

    Let the apple mixture sit for about 15 minutes to allow the flavors to meld.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Roll Out Dough

    On a floured surface, roll out one disc of dough to fit into a 9-inch pie plate. Place the rolled-out dough into the pie plate.

    Add Filling

    Pour the apple filling into the crust, spreading it evenly.

    Cover with Top Crust

    Roll out the second disc of dough and place it over the filling. Seal the edges by crimping with your fingers or a fork. Cut slits in the top crust to allow steam to escape.

    Bake

    Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for an additional 35-40 minutes, or until the apples are tender and the crust is golden brown.

    Allow the pie to cool for at least 2 hours before serving.

Custard

    Heat Milk

    In a saucepan over medium heat, warm the milk until it begins to steam, but do not let it boil.

    Mix Egg Yolks

    In a separate bowl, whisk together the egg yolks, granulated sugar, and cornstarch until smooth.

    Combine Mixtures

    Gradually add the warm milk to the egg yolk mixture, whisking continuously to temper the yolks.

    Thicken Custard

    Pour the mixture back into the saucepan and cook over low heat, stirring constantly until the custard thickens, about 5-7 minutes. Remove from heat and stir in the vanilla extract.

    Serve the warm custard alongside the apple pie.
