Method

Crust Preparation

  1. 1

    Crush Biscoff Cookies

In a food processor, crush the Biscoff cookies until they resemble fine crumbs.

  2. 2

    Mix Crust Ingredients

In a mixing bowl, combine the crushed Biscoff cookies, melted unsalted butter, and granulated sugar. Mix until well combined.

  3. 3

    Form the Crust

Press the mixture into the bottom and sides of a 9-inch tart pan evenly. Make sure it is compact.

  4. 4

    Pre-bake the Crust

Preheat the oven to 180°C (350°F). Bake the crust for 10 minutes and then set aside to cool.

Filling Preparation

  1. 5

    Roast the Apples

In a skillet over medium heat, add the sliced apples and 1/2 cup of brown sugar. Cook until apples are tender and caramelized, about 10-12 minutes. Remove from heat and let cool.

  2. 6

    Prepare Custard Mixture

In a mixing bowl, whisk together the sour cream, remaining 1/2 cup brown sugar, eggs, vanilla extract, and cinnamon until smooth.

  3. 7

    Assemble the Tart

Spread the roasted apples evenly over the cooled Biscoff crust. Pour the custard mixture over the apples, ensuring even coverage.

  4. 8

    Bake the Tart

Bake the tart in the preheated oven for 35-40 minutes or until the custard is set and lightly golden. Remove from oven and let cool at room temperature.

Whipped Cream Preparation

  1. 9

    Whip the Cream

In a chilled mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

  2. 10

    Serve

Serve slices of the apple custard tart topped with a dollop of whipped cream.
