Method
Prep
Safety first
Put on disposable gloves and avoid touching your face or eyes while handling habaneros. Work in a ventilated area.
Sauté & Reduce
Toast spices
Add the cumin, smoked paprika, and black pepper to the pan; cook for 30–45 seconds to bloom the spices and deepen flavor.
Add the chopped habaneros and pineapple chunks to the pan. Cook, stirring occasionally, for 3–4 minutes to warm through and let flavors marry.
Pour in the white distilled vinegar, reserved pineapple juice, and lime juice. Add the sugar (or honey) and salt. Bring to a simmer, reduce heat to low, and let simmer gently, uncovered, for 12–15 minutes until carrots and pineapple are very soft and flavors have melded.
Blend & Finish
Puree
Allow the mixture to cool 5–10 minutes, then carefully transfer in batches to a high-speed blender. Add fresh cilantro (if using) with one of the batches. Blend on high until completely smooth, about 1–2 minutes per batch. If you prefer a thinner sauce, add up to 1/2 cup additional pineapple juice or water while blending.
Strain (optional)
For a silky-smooth catering sauce, pass the blended purée through a fine-mesh sieve or chinois, pressing with a spatula to extract as much liquid as possible. Discard solids left behind.
Adjust seasoning & thickness
Taste and adjust salt, sweetness, and acidity. If sauce needs more brightness, add up to 1 tbs more lime juice or 1 tbs vinegar. If thicker body is desired, sprinkle xanthan gum evenly while blending at low speed (start with 1/4 tsp, up to 1 tsp total) to avoid clumping. Reheat briefly in the saucepan until just simmering to meld flavors, about 3–4 minutes.
Bottling & Storage
If serving immediately at a catering event, transfer sauce to squeeze bottles or serving jars. For longer shelf life, sterilize bottles/jars in boiling water for 10 minutes and hot-fill the sauce at near-simmering temperature (around 80–90°C / 175–195°F). Seal and allow to cool; refrigerate after opening. Refrigerated, the sauce will keep well for 2–3 months. For best flavor, rest the sauce 24–48 hours before serving to let flavors mature.
