Marinated Steak and Marinade
For Cooking / Finishing
Method
Marinated Steak and Marinade
- 1
Trim and Prep
Pat the steak tips dry with paper towels. Trim excess silverskin or large pieces of fat and cut any oversized pieces so the meat is roughly uniform (about 1–1½ inches) for even cooking.
- 2
Make the Marinade
In a medium bowl, whisk together soy sauce, olive oil, red wine, Worcestershire sauce, brown sugar, minced garlic, lemon juice, black pepper, onion powder, smoked paprika, red pepper flakes (if using) and kosher salt until the sugar is mostly dissolved and the mixture is homogenous.
- 3
Marinate
Place the steak tips in a large zip-top bag or nonreactive container. Pour the marinade over the meat, press out excess air (if using a bag), and massage so all pieces are coated. Refrigerate and marinate for at least 1 hour and up to 8 hours. (For best flavor without over-tenderizing, 2–4 hours is ideal.)

Bring to Room Temperature
About 20–30 minutes before cooking, remove steak from the refrigerator and let it sit covered at room temperature to take the chill off. Reserve marinade.

- 6
Sear the Steak Tips
Pat the steak tips lightly with paper towel to remove excess marinade (this helps achieve a good sear). Add vegetable oil to the hot pan. Working in a single layer (cook in two batches if necessary to avoid crowding), place steak tips in the pan and sear without moving for 2–3 minutes to develop a brown crust. Flip and sear the other side 1.5–3 minutes, until desired doneness (approx. 125–130°F for medium-rare, 135°F for medium).

- 8
Optional Sauce (use reserved marinade)
If you want a pan sauce, pour the reserved marinade into a small saucepan and bring to a boil for at least 3 minutes to ensure it’s safe (then simmer 2–3 minutes more to reduce slightly). Remove from heat and whisk in 1 tsp cold butter to gloss the sauce. Spoon over rested steak.

Serve
Slice steak tips if desired or serve whole. Sprinkle with chopped fresh parsley and season to taste with additional salt and pepper. Serve with lemon wedges if using.
