    Rinse grouper fillets under cold water and pat dry thoroughly with paper towels. Trim any thin edges so fillets are uniform in thickness (about 1/2 to 3/4 inch) for even cooking.

    Place fillets in a shallow dish. Combine buttermilk, hot sauce, granulated garlic, and 1 tsp kosher salt in a bowl and pour over the fish so fillets are fully coated. Cover and refrigerate for 30–45 minutes (buttermilk gently tenderizes and adds a tangy base).

Breading

    While fish marinates, build the dry breading: In a wide, shallow dish combine flour, cornmeal, panko, paprika, cayenne, dried thyme, onion powder, black pepper, and 1 tsp kosher salt. Whisk to distribute spices evenly. The panko adds extra crispness; cornmeal gives a coarse crunch—adjust quantities to preference.

Wet Breading Station

    Set up a three-step dredge station: 1) Dry seasoned breading (prepared above). 2) In a second shallow bowl whisk together eggs, milk, and Dijon mustard until smooth. 3) Reserve the marinated fillets (let excess buttermilk drip off but do not pat dry).

Frying & Finish

    Heat a heavy skillet (cast-iron preferred) over medium-high heat. Add oil and heat until shimmering and a pinch of flour sizzles on contact (about 350–365°F / 175–185°C if using a thermometer).

    Working one fillet at a time, dredge fish first in the dry breading, pressing gently to form an even coating, then dip into the egg wash, letting excess run off, and finally press again into the dry breading for a double-crust coating. Place coated fillets on a wire rack and let rest 5 minutes so coating adheres.

    Add butter to the hot skillet and swirl; when it foams add 2 fillets (do not overcrowd). Fry 3–4 minutes per side, spooning hot oil over the tops once or twice, until crust is deep golden brown and internal temperature reaches 135–140°F (fish opaque and flakes easily). Adjust time for thickness (thicker fillets may need 5–6 minutes per side).

Zydeco Remoulade (Classic Creole-style dipping sauce)
