Brisket (smoked)

Prepare brisket
Trim excess hard fat from the brisket, leaving a thin 1/4-inch fat cap for flavor. Pat the meat dry with paper towels.

Apply binder and rub
Spread yellow mustard evenly over all surfaces of the brisket to help the rub adhere. Combine kosher salt, coarsely ground black pepper, garlic powder and onion powder in a bowl. Rub the spice mix evenly over the entire brisket, massaging it into the meat.

Preheat smoker
Preheat your smoker to 225°F (105°C). Add oak or hickory wood chunks for steady smoke. Stabilize temperature before placing the brisket in.

Smoke low and slow
Place the brisket fat-side up on the smoker grate. Smoke at 225°F until internal temperature reaches about 165°F (74°C). This typically takes 6–8 hours for a 5 lb brisket, but monitor with a reliable probe thermometer.

Wrap and continue cooking
At ~165°F or when the brisket has a pronounced dark bark, wrap tightly in pink butcher paper (preferred) or aluminum foil. Return to the smoker and continue cooking until internal temperature reaches 200–203°F (93–95°C) and a probe slides in with little resistance — another 2–4 hours depending on the piece.

Rest
Remove the wrapped brisket and let it rest in a warm cooler or insulated container for at least 60–90 minutes. Keep wrapped to retain juices. Resting allows the connective tissues to relax and the meat to reabsorb juices.

Slice
Unwrap and reserve juices. Slice the brisket against the grain into 1/8- to 1/4-inch thick slices for tender bites suitable for sandwiches.
House BBQ Sauce

Combine all sauce ingredients (ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire, Dijon, smoked paprika, minced chipotle, salt, pepper and water) in a medium saucepan over medium heat.

Bring to a gentle simmer, stirring frequently. Reduce heat to low and simmer uncovered for 12–15 minutes, stirring occasionally, until slightly thickened and glossy. Taste and adjust seasoning — add more vinegar for tang, sugar for sweetness, or water to thin to desired consistency.

Remove from heat and cool slightly. Reserve 1 cup for assembly and store remaining sauce in the refrigerator for up to 2 weeks.

Prepare onions and pickles
If using fresh yellow onion, separate into thin rings or slices. For a mellow flavor, briefly sauté the onion slices in 1 tbsp neutral oil over medium heat for 2–3 minutes until softened but still slightly crisp, or use raw for more bite. Drain any excess liquid from pickle slices.

Assemble sandwiches
Warm sliced brisket gently with reserved au jus/drippings or in a low oven (275°F / 135°C) loosely covered for 10–15 minutes, or warm in a skillet with 2–3 tbsp of reserved juices. Place a generous portion of sliced brisket on the bottom bun (about 4–5 oz cooked brisket per sandwich). Spoon 2–3 tbs of house BBQ sauce over the meat, top with a few slices of yellow onion and 2 pickle slices. Add any optional pickled red onion and a sprinkle of chopped parsley. Cap with the top bun.

Serve
Serve immediately while hot with additional house BBQ sauce on the side.
Finishing & Optional

If desired, use reserved beef drippings to moisten the sliced brisket before saucing for extra juiciness. Leftover brisket and sauce can be refrigerated and reheated gently.
