Prepare smoked proteins
If not already shredded or sliced, remove skin and bones from smoked chicken and shred or dice into bite-size pieces (about 4 cups). Slice smoked Andouille or smoked sausage into 1/4-inch rounds (about 2 cups). Set aside.

Make the roux
In a heavy-bottomed 6- to 8-quart pot or Dutch oven over medium heat, add the butter and oil. When melted and shimmering, gradually whisk in the flour. Reduce heat to medium-low and cook, stirring constantly with a heatproof spatula or whisk to prevent scorching, until the roux reaches a deep brown color (like chocolate) — about 25–35 minutes. Watch carefully near the end; adjust heat to avoid burning. The roux is the primary flavor base, so patience is important.

Cook the holy trinity
When the roux is deep brown and aromatic, add the diced onion, bell pepper, and celery directly to the pot. Sauté, stirring frequently, until softened and the vegetables are integrated into the roux, about 6–8 minutes. Add the minced garlic and cook 30–60 seconds until fragrant.

Deglaze and build the gumbo
Stir in the tomato paste and cook 1–2 minutes to darken slightly. Pour in about 2 cups of the chicken stock to deglaze the bottom of the pot, scraping up any browned bits. Once incorporated, slowly add the remaining chicken stock while stirring to combine smoothly with the roux and vegetables. Turn heat to medium-low so the gumbo simmers gently.

Add proteins and seasonings
Add the shredded smoked chicken and sliced smoked sausage to the pot. Stir in Worcestershire sauce, hot sauce, Cajun seasoning, bay leaves, salt, and black pepper. Bring to a gentle simmer, then reduce heat to maintain a low simmer. Simmer uncovered for 30–45 minutes to allow flavors to marry and the gumbo to thicken slightly. Skim any excess fat from the surface as needed.

Finish and adjust
Taste and adjust seasoning with more salt, Cajun seasoning, or hot sauce as desired. If you want a slightly thicker, silkier finish, sprinkle in the file powder (if using) at the end and stir; do not boil after adding file powder. Remove and discard bay leaves. Stir in chopped parsley and most of the sliced green onions, reserving a small amount for garnish.

Hold and serve
Keep gumbo warm over low heat, stirring occasionally. Reheat gently if necessary; avoid vigorous boiling which can break down the roux and change texture.

Rinse the rice under cold water until the water runs clear to remove excess starch.

Remove from heat and let rice rest, covered, for 5–10 minutes. Fluff with a fork before portioning. Portion 2 quarts of cooked rice per gallon of gumbo (this recipe yields approximately 8 cups dry = about 16 cups cooked, which is roughly 2 gallons; adjust quantities as needed for precise service).
