Prepare shrimp
Rinse shrimp under cold water and pat very dry with paper towels. Leaving tails on helps hold the shrimp on the skewer and looks attractive when serving.

Make marinade
In a medium bowl combine 3 tbs olive oil, 2 tbs lemon juice, minced garlic, smoked paprika, ground cumin, hot paprika or cayenne, kosher salt and black pepper. Whisk until combined.

Marinate shrimp
Add the dried shrimp to the bowl and toss to coat thoroughly. Stir in 2 tbs chopped parsley. Cover and refrigerate for 15–30 minutes (no more than 30 minutes so the acid doesn't begin to 'cook' the shrimp). If using skewers, thread 4–5 shrimp per skewer, alternating curve direction so they lie flat.

Butter baste
In the last 30 seconds of cooking, drop 2 tbs unsalted butter over the shrimp (or brush melted butter) and let it melt and glaze the shrimp as they finish. If using a grill, you can quickly baste with a spoon.
