    Warm and shred brisket

    If brisket is cold, rewarm gently in a 325°F (160°C) oven wrapped in foil for 20–30 minutes until heated through. Chop or shred the brisket into 1/2-inch pieces and set aside.

    Combine beef stock, water, Worcestershire sauce and soy sauce in a measuring bowl and keep warm. This will be used to cook the rice and add extra brisket flavor.

Rice

    Rinse the rice under cold water until runoff is mostly clear. Drain well.

    In a medium saucepan or heavy skillet with a tight-fitting lid, heat 1 tablespoon butter or oil over medium heat. Add the drained rice and toast, stirring constantly, 2–3 minutes until edges look translucent and slightly glossy. This improves texture and flavor.

    Add 2 cups of the warm beef stock mixture to the rice (reserve remaining stock for the meat mixture). Bring to a simmer, reduce heat to low, cover, and cook 15 minutes or until liquid is absorbed and rice is tender. Remove from heat and let rest, covered, 5–10 minutes. Fluff with a fork and set aside.

Aromatics & Holy Trinity

    While rice cooks, heat 2 tablespoons vegetable oil in a large skillet or Dutch oven over medium-high heat until shimmering.

    Add the finely diced onion, celery and green bell pepper (the Cajun 'holy trinity') and cook, stirring occasionally, 6–8 minutes until softened and beginning to brown in spots.

    Stir in the minced garlic and cook 30–60 seconds until fragrant. Deglaze the pan with 1/4 cup of the reserved warm beef stock, scraping up browned bits.

Seasoning & Spice

    Add the smoked paprika, cayenne, dried thyme, black pepper and salt to the aromatics. Stir and cook 1 minute to bloom the spices.

    Add the chopped brisket to the pan and stir to combine, allowing the meat to heat and begin to caramelize, about 4–6 minutes. If the mixture looks dry, stir in up to 1/2 cup more warm stock until the pan is moist but not soupy.

Combine & Finish

    Fold the cooked, fluffed rice into the brisket and aromatics mixture in the skillet. Mix gently to combine so the rice absorbs the pan juices and spice blend. Taste and adjust seasoning with additional salt, pepper, or hot sauce.

    If using file powder, sprinkle it over the rice now and stir through. Cook 2–3 minutes more over medium-low heat to marry flavors and slightly toast the combined mixture.

    Turn off heat. Stir in sliced green onions and chopped parsley. Finish with a squeeze of lemon or lime if using.

To Serve

    Serve warm as a main course or side. Offer additional hot sauce on the side. Keeps refrigerated up to 3–4 days; reheat gently with a splash of stock or water to loosen.
