Prepare crab
If using frozen snow crab, thaw completely in refrigerator 24 hours or under cold running water until pliable. Rinse clusters under cold water and pat dry. Inspect and remove any broken shell pieces; keep legs and bodies whole.

If using live crab (rare for snow crab sold as clusters), humanely kill before cooking according to local guidelines. For most home cooks using purchased clusters, proceed to the boil step.

Build the boil
In a very large stockpot (at least 8–12 quart), add 6 liters of cold water. Add 1 cup coarse sea salt, 3/4 cup Louisiana-style crab boil seasoning, crushed garlic cloves, quartered onions, halved lemons (squeeze one into the pot then add halves), bay leaves, black peppercorns, and optional allspice. Bring to a rolling boil over high heat.

Season adjustment
Taste a tiny amount of the broth (careful, very hot) and adjust: add a tablespoon more of the boil seasoning or up to 1/4 cup more salt if you prefer a stronger brine. The broth should taste bold since it flavors the crab.

Cook the crab
Once the pot is at a full boil, carefully add the snow crab clusters in a single layer if possible. Return the water to a gentle rolling boil and cook for 4–6 minutes for thawed clusters (6–8 minutes for cold fridge-thawed or if clusters are large). You are not trying to 'overcook' — snow crab is pre-cooked when frozen often, so the goal is to heat through and impart flavor. Legs should turn bright orange and be hot throughout.

Make garlic butter
In a small saucepan over low heat, melt 1 cup unsalted butter. Add minced garlic and gently infuse for 1–2 minutes until fragrant but not browned. Stir in 1 teaspoon hot sauce, 1 tablespoon lemon juice, 1 tablespoon chopped parsley, and 1/4 teaspoon salt. Keep warm on the lowest heat or transfer to a warmed serving bowl.

If you reserved some of the cooking liquid, you can whisk 1–2 tablespoons into the butter for more seasoning, tasting and adjusting salt as needed.

Plate and garnish
Arrange warm crab clusters on a large platter. Sprinkle 1 teaspoon cayenne pepper evenly over the crab for a light dusting of heat (adjust to taste). Scatter the 2 tablespoons chopped parsley and lemon wedges around the platter.

Serve immediately with small bowls of the hot garlic butter, extra lemon wedges, and napkins/crab crackers if desired. Provide a shallow dish for discarded shells. Encourage diners to pull legs and crack joints; dip meat into butter and squeeze lemon before eating.
