Method

Prep & Dry Rub

    Prepare chicken

    Pat the chicken pieces dry with paper towels. If using a whole chicken cut into portions, separate into breasts, thighs, wings and drumsticks. Trim excess fat and loosen skin where possible for better seasoning penetration.

    Combine dry rub: In a bowl, mix kosher salt, black pepper, paprika, brown sugar, garlic powder, onion powder, ground cumin and cayenne until uniform.

    Coat chicken: Drizzle the olive oil over the chicken pieces and rub to coat. Sprinkle the dry rub evenly over all pieces, pressing gently so it adheres — cover all sides. For best flavor, refrigerate uncovered or loosely covered for 1–4 hours; if short on time, proceed immediately.

Cooking (Grill or Oven)

    Preheat a charcoal or gas grill to two-zone heat: one side medium-high (direct) ~400°F and one side medium-low (indirect) ~300°F. Place chicken skin-side down over direct heat for 3–5 minutes to develop color, watching to avoid flare-ups. Move pieces to indirect heat, cover, and cook until internal temperature reaches 165°F in the thickest part (breasts ~18–25 minutes, thighs/drumsticks/wings ~20–30 minutes), turning every 6–8 minutes for even cooking.

    Oven method (if no grill available)

    Preheat oven to 425°F (220°C). Arrange chicken on a wire rack set over a sheet pan skin-side up, leaving space between pieces. Roast for 20 minutes, then reduce oven to 375°F (190°C) and continue until internal temp reaches 165°F (breasts ~25–35 minutes total, thighs/drumsticks/wings ~30–45 minutes).

    If cooking quarters or half-chicken, allow extra time: quarters 40–55 minutes, half chicken 55–75 minutes depending on size; always verify 165°F internal temp.

Saucing & Finishing

    Make finishing sauce: Stir the BBQ sauce with apple cider vinegar and honey (if using) in a small bowl to loosen and balance sweetness/tang.

    Glaze chicken: In the final 5–8 minutes of cooking (or last 3–4 minutes on high grill), brush a generous layer of the sauce on each piece. Turn and brush once more so sauce caramelizes but does not burn. If oven-roasting, switch to broil for 1–2 minutes after glazing to caramelize, watching carefully to avoid burning.

    Rest: Remove chicken from heat and let rest 5–7 minutes so juices redistribute and sauce sets.

    Garnish & serve: Squeeze lemon wedges over pieces to brighten flavor and sprinkle chopped parsley if desired. Serve hot with extra BBQ sauce on the side.
