Preparation of Base

    Combine Water and Sugar

    In a medium saucepan, combine 2 cups of water and 1 cup of granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. This will create a simple syrup.

    Remove the saucepan from heat and let the syrup cool slightly. Once cooled, add 2 cups of fresh fruit puree of your choice (strawberry, mango, or lemon) along with 2 tablespoons of lemon juice. Stir well until fully combined.

Making Gelato (Optional)

    If you are making gelato, stir in 1 cup of whole milk, 1 cup of heavy cream, and 1 teaspoon of vanilla extract into the fruit mixture until well combined.

Churning

    Chill and Churn

    Refrigerate the mixture for about 1-2 hours, or until it is thoroughly chilled. Then, pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.

Freezing

    Transfer the churned sorbet or gelato into an airtight container. Freeze for at least 4-6 hours, or until firm.
