Method

Preparation of the Base

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the milk, eggs, and vanilla extract until smooth.

  3. 3

    Melt Butter

In a small saucepan over low heat, melt the unsalted butter. Allow it to cool slightly before adding it to the wet ingredients.

  4. 4

    Combine Mixtures

Pour the melted butter into the wet ingredients and mix well. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.

Preparation of the Filling

  1. 5

    Prepare Berries

In a separate bowl, toss the fresh berries with honey and lemon juice. Allow them to marinate for 10 minutes to release their juices.

Baking

  1. 6

    Preheat Oven

Preheat your oven to 350°F (175°C).

  2. 7

    Bake the Base

Grease a baking dish and pour the batter into the dish. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  3. 8

    Cool and Serve

Once baked, remove from the oven and let it cool for about 10 minutes. Top with the marinated berry filling, sprinkle with powdered sugar, and garnish with fresh mint leaves before serving.
