Gelato Ingredients

Method

Sorbet Directions

  1. 1

    Prepare the Fruit

Wash and chop the fresh fruit into small pieces. If using citrus like lemon, juice it and remove any seeds.

  2. 2

    Make the Simple Syrup

In a saucepan, combine water and sugar. Heat over medium heat until the sugar is fully dissolved, then remove from heat and let it cool.

  3. 3

    Blend the Mixture

In a blender, combine the chopped fruit, simple syrup, and lemon juice. Blend until smooth.

  4. 4

    Freeze the Sorbet

Pour the blended mixture into a shallow container and freeze for about 3-4 hours, stirring every 30 minutes until it reaches a smooth consistency.

Gelato Directions

  1. 5

    Heat the Milk and Cream

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until just below boiling.

  2. 6

Whisk the Egg Yolks and Sugar

In a bowl, whisk together the egg yolks and sugar until they are pale and creamy.

  3. 7

    Temper the Egg Mixture

Slowly pour about a cup of the hot milk mixture into the egg yolk mixture while whisking constantly to temper the eggs.

  4. 8

    Combine and Cook

Pour the tempered egg mixture back into the saucepan with the remaining milk and heat over low heat, stirring constantly until it thickens and coats the back of a spoon (about 5-7 minutes).

  5. 9

    Add Vanilla and Chill

Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 2 hours or until thoroughly chilled.

  6. 10

    Churn the Gelato

Pour the chilled mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency.

  7. 11

    Freeze the Gelato

Transfer the gelato to an airtight container and freeze for at least 4 hours until firm.
