For the Ribeye Steak

    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes. This helps them cook more evenly.

    Season the Steak

    Generously season both sides of the ribeye steaks with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Cook the Steak

    Add the steaks to the pan. Cook for about 4-5 minutes on each side for medium-rare, adding the garlic cloves and rosemary to the pan for flavor.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

For the Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and cut the russet potatoes into quarters. Place them in a large pot, cover with water, and bring to a boil. Add a pinch of salt.

    Cook the Potatoes

    Boil the potatoes for about 15-20 minutes, or until they are tender when pierced with a fork.

    Prepare the Garlic

    In the last 5 minutes of boiling, add the garlic cloves to the pot with the potatoes.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add butter, milk, salt, and black pepper, and mash until smooth and creamy.

For the Seasonal Vegetables

    Prepare the Vegetables

    Wash and trim the asparagus. Peel and slice the carrots.

    Cook the Vegetables

    In a medium skillet, heat olive oil over medium heat. Add asparagus and carrots, season with salt and black pepper, and sauté for about 5-7 minutes until tender-crisp.

    Remove from heat and keep warm until ready to serve.
