Pasta Preparation

Cook the Radiatore Pasta
Bring a large pot of salted water to a boil. Add the radiatore pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside, reserving a cup of pasta water.
Duck Heart Bolognese

Prepare the Duck Heart Bolognese
In a large skillet, heat olive oil over medium heat. Add the chopped onion, minced garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft and translucent.

Add Duck Hearts
Add the duck hearts to the skillet, cooking for about 8-10 minutes until browned. Stir in the tomato paste and cook for an additional minute.

Add Canned Tomatoes and Season
Stir in the crushed canned tomatoes, salt, pepper, and chopped sage. Bring to a simmer, reduce heat to low, and let it cook for at least 20-25 minutes, stirring occasionally.

Cook the Summer Squash and Cherry Tomatoes
In a separate pan, sauté the sliced summer squash over medium heat for about 5 minutes until just tender. Add the halved cherry tomatoes and cook for another 3-4 minutes until they begin to soften. Season with salt and pepper to taste.
Combine and Serve

Combine Pasta and Sauce
Add the cooked radiatore pasta to the bolognese mixture, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve and Garnish
Serve the pasta in bowls, topped with the sautéed summer squash and cherry tomatoes. Finish with a sprinkle of grated Parmesan cheese.
